Over the past three decades, health authorities have urged consumers to replace the so-called “unhealthy” fats with the so-called “healthy fats”. For example, food manufacturers and consumers are being encouraged by governments to switch from animal fat products such as butter to vegetable fat products such as margarine. This article examines some of these issues.
