While Escherichia coli (E. coli) is well known as a pathogenic bacterium or an indicator of poor food safety, it has a less well-known role in food technologies. In this article, we discuss the latest applications of non-pathogenic/beneficial E.Coli strains in probiotic development, bacteriocin production, fermentation optimization, and its importance in modern food production systems.
